"Joshua 5:11 And they did eat of the produce of the land in the day after the Passover, unleavened cakes, and parched grain in the selfsame day" (DLT: torahtimes.org).
produce: not "old corn". This was the new grain that they found standing in the fields around Gilgal. The consumption of the new crop was forbidden until this day.
in the day after the Passover. The wave sheaf was on the day after the annual Sabbath, i.e. the 15th of Nisan. Deut. 16:6-7 refers to a second Passover offering on the 15th of Nisan, which was the festive offering. They returned to their tents in the morning after the night of the watches (the night following the 15th day), at which time there were only six days remaining to the feast (Deut. 16:8). This places the wave sheaf on the 16th of Nisan in the day after the Passover (the second offering). The 16th marks the anniversary of when they actually baked their unleavened bread at Succoth (Exodus 12:37).
parched grain: the waved barley was roasted over the fire.
comment: the Karaites attempted to circumvent this text by saying the 15th of Nisan fell on a Sunday, and that the "Sabbath" referenced by Lev. 23:11 was the Sabbath before the 15th of Nisan that year. They thus have the Israelites eating the new grain on the 15th of Nisan before the second Passover offering has been offered. The problem with the Karaite reckoning is that it causes the day of the wave sheaf to float in relation to the Passover. In the actual history, Israel camped at Succoth on the 16th of Nisan, and there they baked their unleavened bread after a 24 hour march on the 15th of Nisan, from dawn to dawn. From dawn in the 15th day to dawn on the 16th day they went out of Egypt, so that they crossed out of Egypt by night (Deut. 16:1).
comment: in actual fact, the 15th of Nisan fell on a Monday in the year that Israel crossed the Jordan River and entered the land. The 16th of Nisan fell on a Tuesday. While some texts may be ambiguous, the commandment given in Exodus 22:9, "Thou shalt not delay the first of thy ripe fruits" is quite clear. There should be no unnecessary delay of the wave offering for the sake of an interpretation." (DLC: torahtimes.org)
